Description
If you follow the work that we do at Mr Mick and the resulting wines that we make commercially available, you know that the last few years have been an exciting journey. If it is new, ‘alternative’ and unique to the Valley, we are likely to embrace it. One of the last additions to the range is our fortified Red Muscat.
Unlike the most traditional Tawny style in Australia ( where the wines are submitted to a long period of oxidative ageing in barrels), our Red Muscat is made in a nouveau style to preserve the primary aromas. Our inspiration for this wine came from the recognized southern French appellation of Muscat de Beaumes-de-Venice and you can prepare yourself for an explosion of rosehip, redcurrant, cherries and strawberry with the varietal lifted floral notes. Powerful but yet elegant.
Winemaking Notes
The grapes were destemmed and fermented on skins for 4 days only in order to limit colour and phenolics extraction. They were then pressed and the resulting sweet wine (still halfway through primary fermentation ) was fortified with an ultra-premium neutral spirit to stop the fermentation and achieve an alcohol of 17%.
Unlike the most traditional fortified wines, this wine was treated reductively all the way to the bottle, which in winemaking terms means protection from oxidation. No oak treatment, minimal finings and bottled as soon as possible to preserve the fresh and exuberant fruity and floral characters.
Food Pairing
It is a good pair for a wide range of desserts, especially those where sweet spices such as cinnamon and vanilla are the central flavours. Or as a base for a refreshing and summery cocktail like our Mr Mick Spritzer.
