As one of the world’s most iconic wine blends, the Merlot adds middle palate texture and juiciness whilst also softening Cabernet’s powerful structural tannins.
This wine has distinctive varietal characters of plums, inky blackberries, coffee and dark chocolate with hints of violet flower and herbal spice.
It is a mouth-filling wine of great length with textured soft tannins, just the way we like it!
Winemaking Notes
Premium Clare Valley Cabernet Sauvignon and Merlot were fermented for a week on skins with a moderate pump-over regime, gently pressed and racked prior to French oak for ageing. After 24 months oak maturation, parcels were selected and blended to stainless steel tanks, before being filtered and bottled.
Food Pairing
This wine is suitable for drinking anytime from the present to ten years of age and is the perfect match for marinated slow roast lamb shoulder or most game meats.

Current release being 2016 and still only $17. I would be having a word if I was the accountant.
Earthy and starting to show a little maturation. Cassis/blackberry, plum and mulberry fruits with chocolate, coffee grounds and sweet oak. Woody pencil and rich bay leaf give a varietal thumbprint. Still quite bright on the medium-full palate with violets and chocolate with a long veneer of grippy tannin.

With the extra time in bottle this little guy is starting to show some interesting, slightly developed characters that bring a new dimension to a value for money wine. Smooth and succulent with a gently leathery spicy overlay to the medium weight dark chocolate and toasty primary characters.
