Rather than removing the naturally occurring colour from our Pinot Gris, as a true expression of varietal character we choose to retain it in this wine. The resultant slight rose-gold hue matches the equally rich and robust fruit characters on the palate, expressing what has been one of the driest vintages on record, leading to fruit-rich wines.

The 2020 Pinot Gris displays our signature opulent pear, lychee and peach flavours complemented by subtle citrus zest, fullness with fruit sweetness in the middle palate and refreshing acidity. There certainly is no mistaking the variety in the bottle; this vintage is yet another classic example of our very popular style!

Winemaking Notes

Harvested in the cool of the early morning, Pinot Gris from optimum vineyard sites throughout the Clare Valley was crushed, chilled to 5 degrees and pressed, the pressings separated. A cool fermentation ensued for two weeks, allowing maximum lifted varietal fruit expression. Individual vineyard parcels were cold-filtered with a single pass before carefully blending together. The wine has been cold and protein stabilised to industry standards, fined, filtered and immediately bottled under screw cap to encapsulate the flavours and ensure freshness.

Food Pairing

A great food-wine; enjoy while it is young and vibrant, with Asian cuisine, seafood and salads.

Tim Adams was ahead of the pack when it came to planting this variety and is remarkably consistent, producing his house style, seemingly regardless of vintage variation.
It is very much a Gris and captures the natural acidity of the Clare Valley, affording it freshness and energy.
Medium yellow colour, can’t help but see a (varietal) faint pink edge. Classic, pear-driven aromatics are overt, ripe and generous. A well-weighted palate with fruit and acid in balance. Benchmark style, if we’re being true-to-style.
Ageing: now to 2023

“Tim Adams has long set the benchmark for true Gris in Australia, and 2019 represents the definition of his famous style. With a peachy blush of colour and flavour, this is a generously succulent, spicy, exotic and exuberant style that, unashamedly deploys fruit sweetness to effortlessly partner spicy cuisine. But don’t be fooled, it holds integrity, persistence and perfectly judged phenolic spine”.

Tim Adams 2019 Pinot Gris ($24): Tim Adams is certainly reaping the benefits of his “mid-life crisis” decision to plant heaps of this increasingly popular white-ish variety. The wine is robust, full-flavoured and sits comfortably at the gris end of the grigio-gris spectrum. Try it with a chunky, rich white-sauced pasta or, if you’re feeling particularly well-heeled, some lobster.
